In 2026, AI in food is less about manufacturing dreams and more about becoming a precision tool—for light, texture, and consistency. If you take product and brand seriously, you don’t use GenAI to invent; you use it to refine. And in the process, you save time, nerves, and often budget, too.

You can tell pretty clearly right now: the phase where AI food visuals had to be mainly “Wow, that looks like it’s from another world” is winding down. In 2026, almost the opposite is interesting. Enhancement instead of fantasy. Meaning: real products, real sets, real brand logic—and AI more as an invisible co-operator that corrects, smooths, and harmonizes. Not to replace reality, but to reproduce it reliably. I come from film and post, and this feels… familiar. Nobody on set seriously debates whether we “need” colour grading. The question is how much—and whether it looks intentional or like an accident. That’s exactly the zone food photography with GenAI is landing in right now. And yes, I catch myself pausing on some of the current “AI food” motifs. Not because they’re bad. More because they’re so slick that my brain instinctively keeps its distance. Why “Fantasy Food” Feels Tired in 2026 Fantasy is a great trick when you need attention. But attention doesn’t automatically translate into trust. With food, that’s delicate, because an image instantly creates a sensory expectation: Is it crunchy? Is it juicy? Is the sauce creamy or more… well, paste? If AI “improves” something the product doesn’t actually have, you’ve got a problem—just not the kind that looks like a classic retouching fail. It’s subtler. The customer can’t name it, but something’s off. And that kind of mistrust is poison for FMCG, D2C food, restaurants—really, for anyone who wants repeat buyers. On top of that, platforms and marketplaces are getting stricter. Anyone who’s produced for a big retailer or delivery partner knows those uncomfortable follow-up questions: “Is it really that big?”, “Is that really that much cheese?”, or the classic: “Please avoid misleading representation.” AI fantasy gives you more surface area for attacks, not less. And then there’s the zeitgeist. People now see generated images daily. The “AI look” isn’t magic anymore—it’s a texture. You recognize it. The same way you eventually learned to smell stock photos. I’m not sure whether it’s certain light edges or that “too perfect” materiality—but once you see it, you see it everywhere. Enhancement Means: Clean Base Material—and AI Makes It Robust The misconception: enhancement doesn’t mean “we shoot sloppily and AI will save it.” It means you produce a solid, honest starting image (or a 3D/CGI base setup, if that makes sense), and then AI steps in where classic post is either too slow, too expensive, or simply too fragile. What realistically delivers a lot in 2026, without drifting into fantasyland: - Micro-consistency across a whole series: If you have 40 visuals for a campaign, you don’t want the parsley to be deep green in one shot and yellowish in the next—or the sauce to be glossy here and matte there. AI can stabilize that series logic surprisingly well—as long as you define the reference cleanly. - Lighting continuity as a product asset: In film, we talk about “continuity” all the time; food photography has the same problem. A set gets shot over several days, someone nudges the key light ever so slightly, and suddenly the packaging looks flat. AI can align lighting characteristics (highlights, shadow softness, specular roll-off) without “inventing” a new product. - Texture rescue that doesn’t look like plastic: Anyone who’s ever photographed burgers or ice cream knows the tragedy: in real life it looks different after 90 seconds. Enhancement here doesn’t mean generating a new ice cream—it means bringing the existing ice cream back to how it looked 30 seconds after styling. Minimal. Plausible. - Cleanup, but without sterile perfection: Crumbs gone, fingerprint gone, dust gone—sure. But retouch the wood grain to death or smooth every irregular bubble in a sauce and it starts to look like a render. AI can do “natural cleanup” better, if you force it to: less is more. What we keep saying internally at Not Another Mate (and in productions I’ve seen elsewhere) is: AI is at its strongest when it doesn’t replace decisions, but eats repetitive micro-work. Sounds simple, but it’s often the difference between “we’re faster” and “we’re delivering random.” A workflow that’s taking hold in 2026 is something like Locked Look + Controlled Variations: you define a look (colour palette, contrast, lens character, grain/no grain, don’t clip the whites, black point, etc.), lock it down, and let AI operate only within those guardrails. Then it can, for example, generate variants for different formats (9:16, 1:1, 4:5) without the plate suddenly changing or the noodles acquiring new physics. Sounds trivial. In practice it isn’t—and that’s exactly where many teams fail: they give AI too much freedom because it’s supposed to be “creative”… and then wonder why the brand look starts fraying. Although: sometimes you want that fraying—just call it that, not “enhancement.” The New Realism: Legal, Ethical, Brand-Specific In 2026 we’ll have more conversations about what still counts as enhancement. Not just morally, but because it has measurable consequences. If you photograph a pizza and AI “makes the cheese more appetizing,” that’s often just another way of saying: more cheese. And if the customer then gets a different amount, that’s no longer style—it’s a promise. I’m relatively strict about this: AI shouldn’t change product quantity, product shape, or product components. Light, colour, sharpness, minimal texture repair—okay. But no fantasy ingredients, no “just a bit more filling,” no unrealistic steam or shine effects the real product never produces. (And yes, I know: those exact effects sometimes sell really well. That’s the point where it gets uncomfortable.) The good news: once you accept that boundary, the whole setup suddenly becomes more relaxed. You can use AI as a production partner without constantly worrying someone will tear your visuals apart. But it also means: more responsibility upfront. Better setups, cleaner references, clear do/don’t rules within the team. A little less playful experimentation. In return, results you can still look at in six months without them screaming “AI 2024.” In the end, it’s like grading: you don’t see the best interventions. You feel them. The image simply looks coherent, delicious, believable. Maybe that’s the real maturity of AI in food photography: not that it can do everything—but that we finally know what it shouldn’t do. And still, I sometimes wonder how strict that boundary will really remain in practice when the pressure for “more appetite” rises again…
